    The Yarra Yering Underhill Shiraz 2015 displays a deep, intense color. On the nose, it exudes aromas of ripe black fruit, sweet spices, and subtle floral notes.     The Yarra Yering vineyard enjoys a privileged location in the Yarra Valley. The terroir plays a vital role in the quality of the wines produced. climat The region's cool climate, with warm summers and cool nights, promotes a slow and even ripening of the grapes, allowing them to develop complex aromas and a beautiful acidity. The vines are cultivated with care and respect for the environment, preserving the richness of the terroir and allowing its full potential to be expressed in the wines.

    Now headed by Sarah Crowe, Yarra Yering continues to thrive as domaine Family-run. Sarah Crowe, a talented and passionate winemaker, carries on the legacy of quality and innovation initiated by Dr. Bailey Carrodus. Her commitment to excellence and respect for the terroir are reflected in wines of great finesse and authentic expression.

    Vinification and aging

    The grapes are hand-harvested and sorted before being vinified whole or as whole berries. Half of the plot ferments and is aged in a second-use, 3,500-liter vertical oak barrel containing 20% whole clusters, which is then topped up with 100% whole clusters for aging. The remaining fermentation takes place in half-ton Yarra Yering open tanks, with gentle manual pump-overs twice a day.
    Pressing with compressed air extracts the remaining juice from the numerous whole berries. The wine is then aged for 12 months: 50% in a 3,500 L one-year-old barrel and 50% in 500 L French oak barrels, 10% of which are new.
