Vinification and aging

Winemaking at Château Palmer This is an art where tradition and innovation meet. The grapes are carefully sorted and destemmed before being vinified in temperature-controlled tanks to preserve the purity of the aromas. Malolactic fermentation takes place in barrels, adding further complexity to the wine. Aging occurs in oak barrels, some of which are new, allowing the tannins to soften and the oak notes to be delicately integrated. This attention to detail at each stage guarantees a balanced wine with a beautiful structure and excellent aging potential.
