Vinification and aging

The winemaking process for Hennessy Paradis Cognac is rigorous and traditional. The grapes are harvested by hand and then gently pressed to extract the juice. Fermentation takes place in stainless steel tanks, preserving the freshness and aromas of the fruit. After distillation, the eaux-de-vie are aged in oak barrels, where they develop their complex aromas. Hennessy favors barrels sourced from select French forests, which impart woody and vanilla nuances.
