    Vinification and aging

    The winemaking process for Clos des Mouches Rouge 2021 follows Burgundian tradition. After hand-harvesting the grapes, they are destemmed and gently crushed. Alcoholic fermentation takes place in stainless steel tanks, allowing for precise temperature control. Aging in oak barrels lasts approximately 12 months, promoting the integration of oak aromas while preserving the purity of the fruit. This artisanal method, respectful of the terroir, contributes to the creation of a balanced and elegant wine, true to the estate's identity.
