    Vinification and aging

    Winemaking at Château Lassègue is a meticulous process, blending tradition and modern technology. After the grapes are hand-harvested, they are carefully sorted. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. The wine is then aged in oak barrels, some of which are new, for approximately 12 to 15 months. This crucial stage develops the wine's complexity and depth, while preserving the authenticity of the terroir. Each cuvée is then carefully blended, revealing the desired harmony between the different parcels.
