Winemaking and wines

The requirement for quality

The estate's objective is to create wines of great purity, without artifice or excessive extraction. Punching down and pumping over are gentle and infrequent, allowing the grapes to express themselves without being mistreated. The oak used for aging comes from two coopers chosen for the texture and origin of their wood. The wood is perfectly dry, resulting in silky and delicate tannins that do not mask the wines. Aging takes place in 50% new barrels and never exceeds three vintages. The wines are neither filtered nor fined to preserve the integrity of their aromas. As a result, the wines express themselves with both finesse and power, displaying incredible fruit purity.BurgundyWe find Les Grands Chaillots, a structured and very aromatic Burgundy meant for aging; The1er Cru la Toppe au VerthasAloxe CortonImpressive in its finesse, elegance and purity.Corton Les Renardesoffers remarkable power with pronounced leather notes.Vieilles Vignes and Le Rouchauxare found in the appellationWindmillin theBeaujolaisand are true treasures of the appellation: rich, generous and fresh.
