Amarone della Valpolicella is an appellation located in the Province of Verona, Italy. This dry red straw wine is a local specialty, made from Corvina, Corvinone, and Rondinella grapes. The grapes are left on the vine for 100 to 120 days until the juice evaporates, and are then dried on the vine by at least December 1st. The grapes are then crushed and vinified. The wine undergoes aging for at least two years in barrels and then in bottles. All these steps must take place within the designated appellation area. These are exceptional wines.
