Vinification and aging

Winemaking at Château Lascombes is a delicate process that blends tradition and modernity. The grapes are harvested by hand and carefully sorted before being destemmed. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for optimal temperature management. Maceration is lengthy to extract color and tannins. Aging, which lasts approximately 18 months, occurs in oak barrels, 60% of which are new, imparting complexity and structure to the wine.
