    Owner and history

    The Clos des Papes vineyard covers 35 hectares and a wide variety of terroirs, divided into 24 separate plots. The vines are on average 30 years old and can reach up to 80 years. The vineyard is certified organic.

    Vinification and aging

    - Manual harvesting with sorting at the cutting stage, second sorting in the bin, third sorting on the truck and sorting at the table upon entry into the cellar.
    - Destemming and gravity filling into concrete tanks
    - Fermentation with pump-overs followed by a one-month maceration
    - Aged in old oak casks
