    Producer

Planteray Rum is crafted from sugarcane grown in the sun-drenched fields of Trinidad. The tropical climate, with its rich, well-drained soils, contributes to the exceptional quality of the raw materials. The sugarcane is harvested by hand, ensuring meticulous selection of only the finest stalks. This artisanal process is the very foundation of Cavissima's philosophy, which values authenticity and respect for the environment.

    Vinification and aging

The Planteray 2003 Trinidad Rum is made using traditional methods. The sugarcane is pressed to extract the juice, which is then fermented to begin the distillation process. The rum is distilled in pot stills, allowing for a concentration of aromas. After distillation, the rum is aged in oak barrels, where it develops its complexity. This aging, sometimes extended, gives the rum its subtle aromas and velvety texture.

    The team's opinion
