    Vinification and aging

    The winemaking process for the 2017 Pagodes de Cos is carried out with the utmost care, respecting the estate's traditions. The grapes are harvested at optimal ripeness and hand-sorted to guarantee quality. Alcoholic fermentation takes place in temperature-controlled tanks, allowing for precise temperature control. The wine is then aged in oak barrels, some of which are new, for approximately 12 months. This aging process imparts subtle woody notes to the wine while preserving the pure expression of the grape varieties.
