    Vinification and aging

    The vinification of Cuvée Chevry Brut follows traditional Champagne methods. The carefully selected grapes are gently pressed to preserve their integrity. The juice is then fermented in stainless steel tanks, which helps retain the freshness and purity of the aromas. After aging on the lees, the wine is bottled with a liqueur de tirage and then undergoes a second fermentation in the bottle.
