Vinification and aging

Winemaking at Domaine Jean-Marc Millot is meticulous, blending tradition and innovation. The grapes are harvested by hand, allowing for the selection of only the finest. After partial destemming, alcoholic fermentation takes place in temperature-controlled stainless steel tanks to preserve freshness and aromas. Aging in oak barrels, some of which are new, lasts between 12 and 18 months, depending on the vintage. This essential step allows the tannins from the wood to integrate while respecting the fruit. The wines are then carefully blended before bottling, ensuring a true expression of the terroir.
