Owner and history

Due to its large area (113ha), the Château d'Yquem vineyard is planted on a wide variety of soils typical of the Sauternes region. The vineyard is constantly being renewed. Every year, the oldest vines are uprooted on 2 to 3 hectares. These plots are then left fallow for a year before being replanted. No harvest will take place for 5 years on these new vines, to allow them time to reach maturity. Château d'Yquem benefits from a microclimate, with humid mornings and dry afternoons. This is what allows "noble rot" to develop.

Vinification and aging

The harvest is done by hand. A method of successive "sorting" is used: at each pass, only the grapes affected by noble rot are harvested. The others are left on the vine to be affected by the rot themselves. Five to six passes are generally necessary to harvest everything. On average, a week passes between each sorting.

Subsequently, the grains are pressed three to four times.
Fermentation takes place in barrels, new for each harvest, for several weeks. This is followed by 20 months of aging, also in barrels.
