      Winemaking at Bollinger is a true alchemy. The carefully selected grapes are gently pressed to extract the must. Fermentation takes place in oak barrels, allowing for micro-oxygenation that enriches the wine with complex flavors. Each cru is vinified separately before being blended to create the Special Cuvée, a process that requires patience and expertise. Aging on the lees, which lasts for several years, gives the champagne its creamy texture and aromatic depth. The dosage is applied sparingly, preserving the wine's integrity while adding a touch of sweetness.

      Owner and history

      The Bollinger Champagne vineyard covers 164 hectares, primarily Grand Cru and Premier Cru vineyards. The clay-limestone soils, rich in minerals, promote optimal grape ripening. The region's continental climate, with its hot summers and cold winters, imparts a beautiful acidity and aromatic complexity to the wines. The house employs sustainable farming practices, respecting both the environment and the terroir. Each plot is meticulously tended, allowing the full potential of each grape variety to be expressed.
